Margo's Gingersnap dunkers

This recipe makes a nice big batch of cookies that are the best when hot or when dunked in a hot cup of tea...as they do go crispy hard in no time flat. That in no way has deterred me from eating most all of them with my tea at lunch or after dinner.
What brought me to gingersnaps was the fact that I have more than two cartons of molasses kicking around from Emil's party last summer when I baked the beans. For that matter, I have quite a few packages of beans left over also. Any other molasses recipes would be greatly appreciated! In the meantime,here is MArgo's recipe for gingersnaps. She makes them with real butter and I used margarine. MAybe they are softer if they are made with butter. I don't know. She sometimes uses less butter and a little oil in its place.
You can roll them in balls and in sugar then either flatten with a fork, or just leave them to melt into a cookie in the oven. I baked some for twelve minutes and the rest for 10 minutes. I was trying for the chewy centres. Yes, they were chewy when hot, but once cooled, they were all rock hard. The good news is that one dunk in hot tea and they melt in your mouth!



Roll little balls about the size of a walnut and then roll in granulated sugar

Bake ten to twelve minutes. Do not over bake

Yum yum...eat it hot from the oven or dunk them in your coffee or tea.

Here is the recipe:

Margo's Gingersnaps

3/4 cup butter or margarine or a little less butter and oil, instead

Cream in 2 cups of sugar

Stir in:

2 well beaten eggs

1/2 cup molasses

2 tsp. vinegar


Sift and add while stirring

3 3/4 cups flour
1 1/2 tsp baking soda
2-3 tsp ginger ( could add some frsh grated ginger as well)
1/2 tsp cinnamon
1/4 tsp. cloves

mix till blended. Roll into 1" balls and roll in sugar.
Either flatten or leave whole, then bake for twelve minutes or less. Do not overcook!
Bake at 350*
Enjoy... I did!

Correna and Joe's trip and a surprise

These are various photos that Correna sent from their amazing trip to Peru to trek the Incan trail into Machu Pichu. After a visit to the Sacred Valley and Lake Titakaka, they went on to Equador to travel around the Galapagos Islands in order to catch the shots of animals and birds that we never get to see, and some, like the big turtle, are on the verge of extinction.

As you can see, the mountains aren't too forgiving...I think that little white line behind Correna is the trail they just hiked up.


If you weren't going down the Inkan steps , you were going up the Stinkin steps!


Maybe those Incans had longer legs...look at the size of the stairs!

No, these weren't taken in the Galapagos Islands, these beautiful shots were taken by my friend Bobby, when she did a special trip to Churchill MAnitoba to see the biggest bear in the world.. amazing also, so I thought I'd add them to the collection! Thanks Bobby for the fabulous photos!

Bobby said that one was quite entertaining, scratching himself and just showing off for everyone. when they lie on their back, they roll their whole rump over first , in order to stand up... She said it looked quite impossible, but they are so massive, I guess that is how they do it best.
Bobby said that a huge storm blew in and even the ice trekker machine they were in, got into an accident. She was very lucky to see these beautiful animals that are losing their ice habitat every year. She said that she watched a bear lying flat out on her stomach and stretching her front paws out to test the thickness of the ice ,before advancing onto it. Bobby was thrilled to see them in their natural habitat...whats left of it.

Beware of PayPal Spam

I received an email that stated my PAypal account had limited access due to someone trying to access my account and they need more info to update my account.
I checked my account and everything is fine there. No-one tried to access or compromise it. Thus, whoever sent that email to me is trying to phish for my personal paypal information. Do not get sucked in by these spammers and phishers.
In the first place, Pay Pal always states that they will send an email with your name in the header if it concerns you. Second of all, if anything is going on with your account, there will be some message at your PAypal account indicating such. Never never send anbody or link to any sight that tries to access your personal info. There.! You are warned! when I checked who the email was from...it said paypall.com.
See how tricky they are...two ll's at the end of the word PAypal.

More pics

Finally, I added the last of the pics from our Cuba trip. This is the slideshow of our Catamaran trip to Playa Co-Co...a beautiful island with white sand that is as fine as icing sugar. Amazing to see. I'd like a beach of that sand here in Harrop! See the sidebar and click on the top slideshow to enlarge it.
Although our day started out cool and windy, it became pleasant and balmy while we were swimming with the dolphins. The waters turned crystal blue and the sun started to pour on the heat. The rest of the afternoon was like a day in Paradise...Eating, drinking, eating , swimming, relaxing and watching the birds! It was well worth going on the excursion. Otherwise, one would never have seen the part of Cuba that everyone raves about...the pure white sand beaches.

Correna said they too encountered those beautiful beaches on their trip to the Galapagos islands. I'll be putting up some of their photos one of these days soon. Otherwise, Joe has a bunch posted on facebook.
I have been too tired to play on the computer much these nights... bed is calling me now! In fact, I completely missed Ronda's birthday and John and Ronda's anniversary... so Belated Happy wishes to them, and a HAppy Birthday to my nephew, Robert, in Calgary, who turned fifteen today... hard to believe he is that old.
So it is off to bed...
Oh Yes, Congratulations to Annette ...she is the new manager at a Hillside location of her Van City credit Union...I am proud of you!!! She started on Tuesday of this week...said her new staff is all sick with the flu.. nice thing to walk into.
And Congratulations to Sonia for taking some more holidays...Back to St. Lucia for more Catamaran fun. Emil will be the number one house, dog , and kidsitter while she is away... No dull moments with my family!

Visit with Auntie Mary today

Well, well, it was a beautiful day today as Joyce and I drove up to Nakusp for a little visit with our sweet Auntie Mary. She was waiting at the door...saying to us just that: "I was waiting and waiting for you to come! " She was so happy the tears were streaming ,not just down her face,
but ours, as well. We had big hugs and then it was time for tea and muffins and fresh strawberries that Joyce and I brought up to her. She put the bean soup and the apple pie in the fridge for a snack later, and then we chatted,ate and drank tea ,and she showed us her knitting.
She made 17 pairs of mittens this fall for all the kids! If we are half as spry as her at that age, we will all be blessed!
Unfortunately, she took a fall out of bed the other night and still had bandages on her shins where she spilt the skin open. Poor Aunty... she is lucky she didn't break a bone!

She took us on a big tour of Halcyon place,where she stays,and it looks like a clean and roomy facility with lots of spaces for visitors and residents. They are up to 18 0r 19 residents now,where they were talking closure. The need is so great that residents come from as far as Grand-Forks, due to lack of space in their area.

After we said our goodbyes, Joyce drove me up to the Nakusp Hot-springs and we both headed to the hot pools for a nice long soak! Did that ever feel wonderful! There were few people in the pool, but as we were leaving, more people began arriving. It was a good form of relaxation on Valentines day!

This is the hot pool...and it was around 110* I think...it cooked me in a few minutes!


By the time that we were well pruned, we were also quite starved. Nakusp has a great little Organic restaurant on a side street(2nd?)..can't recall the name...but the food there is terrific for a light lunch. We had a beautiful Chanterelle Mushroom Curry soup and a procuito & cheese and red pepper whole wheat panini... oh- yum yum! Generous servings, fresh, brightly garnished and served all in quick order. Filled us up enough that we had to by-pass the case of amazing looking cakes and deserts!

The drive home was pleasant, the daylight lasted and now it is back to reality...I've done a load of wash, cleaned up and sorted out things, took chicken wings out for tomorrow and ate a nice bowl of the bean soup that I took up to Auntie.
Joyce and I had a great day and it reminds me that I should go up more often, as Auntie was sooooo happy to have us visit. That's our last Auntie, so we should learn a little more from her while we can.

Beware anyone posing as Rev Canada and askiang for personal information. A lady in Castlegar gave away all of her personal identification in one bogus email. No-one who is legit will ask for any personal data by email . If in doubt, phone the agency ( using the phone book number for it) and check it out!

A Spirograph is a curve formed by rolling a circle inside or outside of another circle. The pen is placed at any point on the rolling circle. Beautiful Sunday

Our house, our snow. The good part is that we could walk on top of it without falling thru.






A week ago, the neighbours were iceskating down here at the lagoon on the rink they created. Now you can see that the ice is seriously melting...
Emil and I took a nice walk in the sunshinetdown to the beach today.

Here you can note the melting edges... and the big crack where the water dropped suddenly.

I bathed Silky today and she looks all fresh and clipped and clean..l She loved being able to romp thru the snow today.

Its a yawner after being groomed for 2 hours...
Hope you got out and enjoyed the sunshine today as well!
The week-end went by so fast that I can hardly believe it will be Monday again when I wake up tomorrow! We had Deb and Ashley over for dinner on Saturday night, but Ashley didn't feel well after dinner... maybe food poisoning aye? He had to go home to bed. Deb stayed and we desert and a few laughs and before we knew it, it was 11:00pm. I must be getting very old as time seems to be flying these days! Today, after I bathed and clipped Silky, Emil and I took a walk on top of the snow, down to the beach, then back around and up to Mike and Lisa's place. We invited them over for a wine and so they came and we yapped away the rest of the afternoon. hey are a nice couple, and good to have as newish neighbours in our"hood." Marlene, our other neighour invited us over for a Post Christmas turkey dinner on the 21st, so I am looking forward to that. love turkey!
Okey, my eyes are going down for the count, so I think I will tootle off to bed...and finish watching ET at the Grammy awards...from my bed and my new flannelette sheets from LLBean. The sheets are supremely warm and cozy...makes one WANT to go to bed. They can be ordered online too and they arrive in no time at all without any duty charges.

Good Morning...and TGIF!!!

Here is a pic of the little autobuses that ran all around the resort... You could hop on anywhere as long as there was room for you. At the end I have several videos shot while we were riding the bus... Enjoy!



7:00 am and it looks like we received a skiff of snow last night...nothing to get too worried about, but it is still a dark grey outside. Seems like the days are getting longer,but not as fast as I'd like! My book of good things says that on Feb18th, I'll get out of work and it will still be light out... then I'll be really thrilled! So we have pretty much just been working and sleeping... Emil is busy trying to clear the build up of icy snow that never got shovelled on our back patio while we were gone.Still there is piles of rock solid ice where we walked,so it isn't an easy task...but what the hey...not much else to do, while it is still winter...


Our neighbours returned home from their trip to South Beach Florida and then to the island of Grenada. They had a week with a lot of rain while on the island, but loved the beach and hotel when the sun was shining... they brought me back fragrant spices...nutmeg, cloves,and bay leaves, and big marble balls of pure chocolate to make a big batch of hot chocolate with. I haven't tried the chocolate yet, but it too smells yummy. The island grew many spices and cacoa beans and they visited a cocoa factory,as well as a rum factory...yum!


oh-oh...it is snowing out like crazy... I told Emil it wouldn't snow heh-heh...


So it will be a quiet week-end again... I invited Deb and Ashley over for dinner on Saturday night,and that is about it... do some cleaning and start a job of sorting out some piles of whatever down the basement... no lack of them...


So my time is up and here are a couple of videos taken while we rode the autobus from the quiet pool end of the resort to the beach end of the resort where our villa was located.. the first video is just to the theatre...the big pink building on the right. Then you will see many villas and the waterslide at the activity pool. We started the ride after we left the quiet pool. Enjoy the ride...and don't run over anyone!

Happy Friday Night Everyone

The crescent moon with so much earthshine that you can see the whole moon. Venus is beneath, in radiant beauty.. look up if you are outside and it is clear out.

Well, it was a beautiful sight in the sky the past few clear nights... thus I ran outside with my tripod and set up my camera to catch a few shots before the big bank of cloud moved in to obliterate everything.
Now it is windier than ever out..either blowing something our way or taking it away forever.!
So sorry I haven't been up to blogging or facebooking for the whole week... seems like I am pooped every night by ten and have to hit the old bed. Jet lag and then I think that something I ate for lunch last Thursday, put my stomach off for the past week,as well.
Enough about me...how are you? Sonia is back from St. Lucia. Correna and Joe are back from their vacation to Peru and the Galapagoes Islands, and Corinne and Wayne are back from Mexico... Eva and Dave and Family are packed and ready to go to Florida on Tuesday,Deb and Ashley are in Grenada and Emil...is down in Vancouver for Aunti Vi's Celebration of life tomorrow at Terry's.
She was a way too young and too vibrant to pass away, and she will be missed by her two Sons, Terry and Scott, and their wives and little girls, as well as her sisters and her brother John and of course little Peter!... It is hard to lose a mom...she is the pillar of nearly everyone's family, and once she is gone, the family has to find the strength to pick up where she left off and try to keep everything in order, the way she would have liked. In just a few years the family of twelve has now shrunk to seven..
On a happier note...Happy Birthday to Corinne. Emil is there helping her and Wayne and kids to celebrate, tonight. I'm sorry I missed going, but work was calling me.
So it will be a quiet week-end around these parts.
