Are we having fun yet??? Bruschetta

Happy to be outside in a heat wave...+2 or so!

Here's KAleigh...beautiful granddaughter.. sweet photo...just need one a little larger now! ...and how about one of MAddie??? I missed you both a lot this Christmas... just not the same.

Lynn drove over in the aftermath of the snowstorm on Saturday. I met her in town and we plugged along back out to HArrop. Just as we turned the corner to go down our street, a car was stuck ...out to more than the middle of the road which was still buried in nearly two feet of snow! I plowed on by the stuck car and Lynn followed. The best thing to do was to keep the momentum up to get past Stucky, and then all down our road. It was a mess of deep snow with a couple of goat trails that didn't match up to our sets of wheels. We made it and that was the most important. At least Emil had the driveway cleared.

Lynn was a doll...bringing all sorts of yummies and especially nice was this yummy can of bruschetta mixture( from Wal mart) ( chopped spiced tomatoes) that could be spread on toasted slices of baquette. You brush the bread slices with olive oil first, then toast under the broiler, then spread on the brushetta mixture ( we added a bit of balsamic vinegar, and some melted pesto, and a few more italian herbs and sliced black olives) then topped each with some grated mozzarella and grated parmesean cheese. Once broiled for a few minutes, the cheese melts and the tomatoes heat up and they taste delicious... We ate them for appies and later we had them again after about 20 rounds of Mexican Train with Deb and Ashley! Also Lynn brought ou these little appies made from wonton wrappers that you bake in a muffin cup. They come out lightly browned and crisp and can be filled with most anything. We just poured in some salsa and enjoyed them like a large natcho chip. Lynn filled some with pork sausage to serve at her party... Simple to make and tasty and crunchy... all good. Thanks Lynn for bringing something new to the table!

After a late night of Train and general yapping, we didn't get off to a very early start. We drank a few coffee while watching the new DVD I got Lynn for Christmas of Celine Dion in concert at Vegas ! It was good! Afterenjoying a hearty ham and scrambled egg and mushroom breakfast, we doodled around a bit, then headed out for a walk while the sun poked its head out, and the skies cleared of clouds. A big "whitey" was heading our way from Nelson at the time Lynn decided to leave. Nothing much materialized except some sleet for ten minutes. She said the roads were in better shape going home, despite the additional four inches of snow overnight! One can never tell what either the roads or the weather will be like!
The doggies had fun in the snow, that is for sure!
Well, I better go to bed...it is back to work after a well earned four days off. With luck , there won't be too many exchanges!
In the meantime, I have started to pack my suitcase, because believe it or not... WE ARE GOING ON TRIP! Emil booked us an all inclusive to Veradero... and it is coming up fast! Thank-you to my sweety! I guess after forty years, we ought to celebrate just right!
And we aren't the only ones going on a trip... Joe and Correna leave in less than 12 hours for the Galapagos, but with a stop to Cuzco ,via Lima and a walking trek to Machu Pichu in Peru. They will love the sights there... jsut beware of the altitude... I think all the names of the Incan ruins were thought of in a moment of puking from Altitude sickness.. Saxhey Womannnnn.wheh! Phlehw..all I could think about when my head was hung over the big white telephone..or was that yellow? Makes me shudder to this day. Ok, so I am packing lots of gravol and Immodium and tylenol, and gaviscon and you name it...mosquito repellent.
