Black Bean and Spinach Soup

This Soup is relatively quick to make, and if you google it, you will find a dozen variations of the same thing, so it is apparent that everyone started with the same basic ingredients, then went ahead and did their own thing.

I use Mild or Hot Italian sausages (6) ( Johnsonville)
2 cans of black beans
2 large cans of diced tomatoes...or you could used home canned ones.
3-4 cups raw spinach
optional ingredients include lentils, diced red and green peppers, diced carrots, grated garlic, Epicurian Pueblo Bean Dip spice, Hot sauce, and the kitchen sink.

If you are using canned black beans, ignore the next bit:

For this particular recipe I soaked dried black beans overnight in water, then drained that off and put the beans in a large pot and covered them with about an inch or two of water, then put the heat under them.Of course, you have to be extra careful that the beans don't dry out, so keep adding water as needed. In Costa Rica, they cooked the beans this way...not flooding them with a ton of water. In the end, when the beans were ready, they blended them into mush for a yummy black bean sauce. ( you need to add both sugar and salt and hot sauce to make it taste like anything.)
Back to cooking beans.It takes about three hours to cook them to the soft bean stage, even if they had been soaked.


I had about four cups of black beans in my pot, when I added the two large cans of diced tomatoes. I added a little extra water as it still looked pretty thick. Add a liberal shake of salt, a couple of teaspoons of sugar and let the mixture bubble along. Stir to prevent the beans from sticking.
Meanwhile you can cook your sausages. I prick them with a fork or knife, then fry a bit and then add 2 inches of water and fry them with the lid on the pan, replenishing water when it starts to boil dry. In most of the other recipes, they removed the sausage meat from the casing and fried it all up so it looked like ground beef. Suit yourself. Meanwhile peel and dice a carrot, and throw it into the tomatoe mixture.
Once the sausages are pretty much cooked, I remove them from the fry pan to a cutting board where I chop them into bite-sized slices. I added all the slices to the tomatoe soup part.

To the drippings in the fry pan, I added a couple of teaspoons of diced garlic, and my diced red and green pepper. I sauteed the peppers till soft, then added those to my soup. If the soup looks too thick, you can use your Braun to blend some of it . I tasted it and added 2 tsps or more of the Victoria epicure spice called Pueblo Bean Dip. It gives a nice flavour. I suppose one could add some taco seasoning or chili seasoning, or Italian seasoning if you want to flavour it Italian. I added more salt and a little more sugar to round out the flavour, then a dash of hot-sauce to perk it up. At the very end, I dumped in the fresh spinach, gave it a stir, until bright green, then dished up a big spoonful over top a slice of cheddar cheese. Lastly I topped it with some toasted croutons, and then I gobbled it all up! It was a soup recipe that I first found in a recipe book entitled "Dishes under 30 Minutes"...so if you are usijg the canned bean method, it should only take you a half hour to make. It is totally filling and very yummy! give it a try on a cool winter day!

That was a warming end to my day spent largely outside. I set up my two reindeer, and my blow up snowmen trio, plus decorated the railing with LED lights. The big thing was getting all the cords to co-ordinate and getting everything plugged in. I set up my new timer that has a light sensor. Seemed to do its job and come on just as dark was setting in. Now I have all of the Xmas decorations out into the middle of the basement. Right now, I feel like a little nap, but I do want to get my living room decorated for my party in two weeks... and most of all I want to bake...

SPLENDA®

Don't turn up your nose at the thought of substituting Splenda for sugar in some of your recipes! I think I will try a few of these delicious looking desert recipes for my upcoming party...How about Cream chees Raspberry Brownies, or Chocolate Splenda Truffles??? Sounds pretty decadent to me... I've already printed off a number of them...especially anything that can be made ahead and frozen. Check the Splenda website for some easy and new looking recipes.
Oh -oh... I am yawning...had an early morning as I took Silky to the Vet for her rabies shot... poor mutt,s he trembled like a leaf, then had to spend the day at the store with me... She settled down after about three hours, when her nap time set in.
Tonight Emil and I spent our last evening together before he goes to visit the girls in Victoria. We opted for a nosh over at the BBI...The wings and NAtchos were excellent, not to mention the beer... oh yes, that could be why I am yawning. I have an early morning appointment again tomorrow, meaning that I will be up early once again. I'll be looking forward to Saturday morning and a nice sleep in... ( like to 7:00!) I sometimes sleep longer, but not often. ok...have a good night...

Big Dance in Balfour on the week-end

What a Pleasant Week-end! Lynn came over on Saturday in perfect time..I had just finished laundry, beds and vacuuming and was ready for a snack when Lynn arrived. Lynn hadn't been over in a long time,s o we had a good blab over lunch while Silky and Co-co had a run around and a visit. Emil was off at the fishing derby,so we had the afternoon to ourselves before eating dinner and heading over to Deb and Ashley's, then to Balfour for "The Dance"! Morgan's brother , Wilbur and his wife, Ellen organized the private party, and judging bythe turnout it was quite a success. Everyone brought a snack and their own refreshments and then donated $5.00 at the door to help pay for the band. Now the band was right out of the history book. In fact,they may have been the same band that played at our wedding! Too funny! But funny or not, for two guys, they put out a lot of sound with their big ol' saxaphone and an accordian player who used a keyboard for melodies and special effects! Both fellows sang, and usually after 40 or 60 seconds, you recognized the song as something from and era or two ago, but the sound ws big , and after a few trial songs, they figured it out...most people wanted to jive or two-step. From the Chatanooga Choo-choo to LA Bamba, they kept everyone dancing all night. It was good fun,and thanks to Wil and Ellen for inviting us all.

Our walk today


Can't recall the name of these berries, but they sure stood out in the trees today. (oh yes, the bears eat these berries...so it appears in the poop!) Lynn and I took a lovely hike around the neighbourhood this morning, taking advantage of the mild weather.


Looking back , up towards the house. Pretty brown, but soon there will be snow. This is where our walk ended.



Ok, so we are going backwards on the walk here. Lynn, getting her camera set. Note that Emil's boat is gone. He has been in the fishing derby all week-end.




Backwards walking... here we cut through the field ...and it was long, tall and deep with golden swamp grass... We scared up a few deer and never saw any bears, thank-goodness.





Luckily, I never lost Lynn in the grass. One had to be nimble to navigate the potholes underneath the grass.

Voila... the new vineyard, complete with page wire fence and beautiful gate. I think the planters of the vines are not aware that the fields around, abound with gophers...and the page wire will not keep them out! Maybe gophers don't like grape roots???





Once out of the grassy field, we made our way down to the lakeside, and then back to our beach.


We spent the a nice portion of the afternoon,s oaking our tired dancing feet in the hot-tub... and then Emil returned with this beautiful Dolly fish...about 4 pounds... Yum!
